Job Summary :

The Baker is responsible for preparing, baking, and presenting a wide variety of Italian breads, pizzas, pastries, and desserts that align with the restaurant's authentic Italian standards. The role requires strong knowledge of traditional Italian baking techniques, attention to detail, and the ability to work in a fast-paced kitchen environment while maintaining consistency, quality, and food safety standards.

Key Responsibilities :

Bread & Dough Preparation

  • Prepare, knead, proof, and bake a variety of Italian breads such as ciabatta, focaccia, pane casereccio, and grissini.
  • Manage pizza dough fermentation and stretching according to traditional Italian methods.
  • Ensure proper portioning, shaping, and baking techniques to achieve consistent results.

Pastry & Dessert Production

  • Assist in the preparation of classic Italian desserts such as cannoli, biscotti, sfogliatelle, bomboloni, and crostata.
  • Support the pastry team in producing tiramisu, panna cotta, and other signature sweets as required.
  • Quality & Presentation

  • Ensure baked goods meet the restaurant's quality, taste, and presentation standards.
  • Innovate and contribute ideas for seasonal or special Italian baked items.
  • Operations & Maintenance

  • Operate and maintain baking equipment such as ovens, mixers, and proofing cabinets.
  • Monitor oven temperatures, baking times, and product consistency.
  • Ensure proper storage of ingredients to maintain freshness.
  • Hygiene & Safety

  • Maintain cleanliness and organization in the bakery and prep areas.
  • Follow food safety and hygiene regulations in compliance with HACCP standards.
  • Properly label and date all baked products and ingredients.
  • Collaboration

  • Work closely with the Head Chef and kitchen team to align baked goods with menu requirements.
  • Assist in inventory management and ordering of baking supplies.
  • Support other kitchen operations when necessary.
  • Qualifications & Skills :

  • Proven experience as a Baker, preferably in an Italian restaurant or bakery.
  • Knowledge of traditional Italian baking methods, breads, and desserts.
  • Strong understanding of dough fermentation, proofing, and baking techniques.
  • Creativity and passion for Italian cuisine.
  • Ability to work early mornings, weekends, and holidays.
  • Excellent time management and organizational skills.
  • Team player with attention to detail.
  • Requirements :

  • Strong knowledge of food safety, hygiene, and HACCP standards.
  • Ability to handle large production volumes while maintaining quality.
  • Basic knowledge of kitchen inventory control and ingredient cost management.
  • Effective communication skills with colleagues and supervisors.
  • Willingness to attend training sessions and continuous learning in Italian baking.
  • Physically fit to perform tasks requiring lifting, standing for long hours, and working in hot environments.
  • Professional appearance and adherence to grooming standards.
