Position Summary To lead and oversee production of gelato, related desserts as required and maintaining product standards. Key Responsibilities -Product Development and Formulation - New gelato flavors and formulations - Conduct small-scale and pilot plant trials to test new ingredients and processes - Support recipe optimization to improve texture, stability, and sensory attributes - Prepare product costing - Manage production staff and schedules -Quality Control and Assurance - Monitor raw materials and finished products to ensure consistency and compliance with specifications - Conduct sensory evaluations and stability tests, including overrun, melting resistance, and shelf-life studies - Trouble shoot quality issues related to texture, flavor, and appearance - Maintain detailed records of product trials, formulations, and test results -Food Safety and Regulatory Compliance - Ensure products comply with local food regulations (e.g., Malaysia’s Food Act 1983, Food Regulations 1985) - Prepare technical documents, including ingredient lists, allergen declarations, and nutritional labelling - Support HACCP, GMP, and food safety audits -Process Improvement and Production Support - Work with production teams to ensure smooth scale-up of new formulations - Identify process improvements to enhance gelato texture, mouthfeel, and shelf stability - Trouble shoot formulations and processing issues during manufacturing - Research and Market Trends - Stay updated on industry trends, new ingredients, and consumer preferences in gelato - Analyse competitor products and propose innovative new flavors and concepts - Support sustainability initiatives, including clean-label ingredient sourcing and process efficiency improvements [Apply now at https : / / my.hiredly.com / jobs / jobs-malaysia-jag-scoops-sdn-bhd-job-gelato-production-chef-gelato-manufacturing-facility-kota-kemuning-0]
