Hilton, a global hospitality leader with brands such as Hilton Hotels & Resorts, Waldorf Astoria, DoubleTree, Hampton, and more, seeks a Sous Chef – Chinese Cuisine to oversee culinary operations and maintain high standards in the hotel’s kitchen.

What will I be doing?

  • Plan, prepare, and implement high‑quality food and beverage products, ensuring all areas of the restaurant meet standards.
  • Work seamlessly with recipes, standards, and plating guides.
  • Maintain all HACCP requirements within the hotel operation.
  • Use kitchen equipment, tools, and machines appropriately.
  • Continuously refine training manuals and SOPs.
  • Participate in quality initiatives such as daily chef briefings and monthly team meetings.
  • Assist with off‑site events, inventory, menu preparation, and new dish development.
  • Control kitchen stations, coordinate closely with Stewarding to ensure cleanliness and reduce breakages.
  • Respond to guests’ requests and adapt to changes.
  • Purchase and control production, ensuring optimal profitability and minimal wastage.
  • Verify equipment functionality and prepare work orders for Engineering.
  • Maintain and update recipes, costings, and quality standards.
  • Select and train team members, ensuring certification and adherence to hotel rules.
  • Monitor food quality, timing, and cost control to maximize guest satisfaction.
  • Review timesheets for accuracy and compliance with break policies.
  • Promote teamwork to achieve departmental goals and uphold Hilton values.
  • Maintain the kitchen’s cleanliness, hygiene, and safety.
  • Carry out other reasonable duties as assigned.

What are we looking for?

  • Local Malaysian citizen, High School graduate or above.
  • Minimum 5 years as a cook in a Chinese kitchen at a 5‑star hotel or equivalent restaurant with high standards.
  • At least 3 years as a Chef de Partie or 1 year equivalent in an international brand hotel.
  • Valid health certificate.
  • Proficient in a wide range of cooking techniques (boiling, frying, stewing, reduction, simmering, steaming, baking, soup making, dry goods preparation).
  • Creative menu design and food promotion experience.
  • Hands‑on trainer, capable of coaching and motivating staff.
  • Proficient with Microsoft Word and Excel.
  • Strong leadership, problem‑solving, and stress‑management skills.
  • Knowledge of HACCP and technical hospitality or culinary training preferred.
  • Good command of English and Bahasa (both oral and written).
  • Experience with international chain hotels is preferred.
