Responsibilities

  • Oversee daily kitchen operations for Shang Palace and Oceano Seafood Restaurant, ensuring top-quality culinary standards.
  • Lead, train, and mentor kitchen team members including Sous Chefs, CDPs, and Commis.
  • Ensure compliance with food safety (SFS, HACCP) and hygiene standards at all times.
  • Drive menu development, creativity, and seasonal promotions in collaboration with the culinary team.
  • Manage food cost control, portioning, and inventory to maintain profitability.
  • Maintain consistent guest satisfaction through quality control and regular feedback.
  • Implement environmental, health, and safety policies in line with hotel standards.
  • Coordinate with other departments to ensure smooth kitchen and service operations.

Requirements

  • Minimum 8 years of experience in a similar role within an international hotel or fine dining restaurant.
  • Proven expertise in authentic Chinese cuisine, menu design, and modern presentation techniques.
  • Strong leadership, communication, and team development skills.
  • Excellent knowledge of food safety and occupational health standards.
  • Diploma or degree in Culinary Arts or equivalent professional qualification.
  • Creative, detail-oriented, and passionate about culinary excellence.
  • Ability to manage multiple outlets and ensure consistent performance.
  • Fluent in English and Mandarin; additional languages are an advantage.
