Job Summary
The Central Kitchen Operations Manager will be responsible for leading the development and future operations of Rollti Malaysia’s central kitchen . This role focuses on setting up the foundation for large‑scale food production, packaging, and logistics to support Rollti’s expansion into ready‑to‑eat (RTE) products and distribution to convenience stores, airports, universities, and other retail channels .
This is a hands‑on and strategic role , requiring someone who can handle the groundwork—planning, research, supplier coordination, and process design—and later manage full‑scale central kitchen operations once established.
Key Responsibilities
- Lead the planning and setup of Rollti’s central kitchen, including kitchen layout design, workflow planning, and operational SOPs.
 - Drive the development of Rollti’s Ready‑to‑Eat (RTE) menu, including product research, recipe standardization, portioning, and packaging optimization.
 - Conduct feasibility studies for RTE product preparation, shelf‑life management, and production scalability.
 - Plan and develop logistics and distribution models for supplying RTE products to convenience stores, airports, universities, and other commercial outlets.
 - Collaborate with the R&D and Product Development teams to innovate and refine Rollti’s RTE offerings.
 - Coordinate with procurement and suppliers for sourcing ingredients, packaging solutions, and kitchen equipment.
 - Work closely with the Quality Assurance team to ensure full compliance with hygiene, food safety, and Halal standards (HACCP, GMP, etc.).
 - Develop and document operational SOPs for production, inventory control, hygiene, and equipment maintenance.
 - Support budgeting, cost estimation, and resource planning for the central kitchen setup.
 - Identify and liaise with vendors, logistics providers, and service partners to support production and distribution.
 - Once operational, oversee and manage the daily kitchen operations, including production, staff supervision, and delivery coordination.
 - Continuously review and improve production efficiency, cost control, and product quality.
 - Contribute to the company’s growth strategy and expansion of Rollti’s central kitchen and RTE production capabilities.
 
Requirements
Diploma or Degree in Food Technology, Culinary Arts, Manufacturing, Operations Management, or a related field.Minimum 5 years of experience in central kitchen operations, food production, or large‑scale F&B manufacturing, with exposure to setup or expansion projects.Strong understanding of food hygiene, Halal, and safety regulations.Hands‑on, detail‑oriented, and able to manage both planning and operational execution.Excellent project management, coordination, and problem‑solving skills.Proactive and resourceful, with the ability to work independently and lead initiatives.Willing to be based on‑site and actively involved in operational groundwork and daily production once launched.#J-18808-Ljbffr
