Responsibilities
- Oversee daily kitchen operations for Shang Palace and Oceano Seafood Restaurant, ensuring top-quality culinary standards.
- Lead, train, and mentor kitchen team members including Sous Chefs, CDPs, and Commis.
- Ensure compliance with food safety (SFS, HACCP) and hygiene standards at all times.
- Drive menu development, creativity, and seasonal promotions in collaboration with the culinary team.
- Manage food cost control, portioning, and inventory to maintain profitability.
- Maintain consistent guest satisfaction through quality control and regular feedback.
- Implement environmental, health, and safety policies in line with hotel standards.
- Coordinate with other departments to ensure smooth kitchen and service operations.
Requirements
Minimum 8 years of experience in a similar role within an international hotel or fine dining restaurant.Proven expertise in authentic Chinese cuisine, menu design, and modern presentation techniques.Strong leadership, communication, and team development skills.Excellent knowledge of food safety and occupational health standards.Diploma or degree in Culinary Arts or equivalent professional qualification.Creative, detail-oriented, and passionate about culinary excellence.Ability to manage multiple outlets and ensure consistent performance.Fluent in English and Mandarin; additional languages are an advantage.Seniority level
