Chief Baker - AEON Kuantan

Responsibilities

• To supervise the daily work in the bakery department, including merchandise display, baking, table work and any other work directly involved in the bakery.
• To train new staff on the various work / methods involved in pastries, cakes and bread making.
• To conduct follow-up training to expose staff to new methods or products on baking to enhance their product knowledge.
• To oversee the staff on their work and to correct / teach them if necessary.
• To delegate the various work / method involved in the bakery to the staff accordingly.
• To be directly involved in merchandise control of the bakery department.
• To plan items to be made and the required quantities for the next day.
• Responsible for achieving the sales targets for the department and the methods to achieve this goal.
• To administer store staff discipline based on the disciplinary guidelines and policies of the Company.
• Responsible for the number of products to be made and the introduction of promotional products throughout the year, including promotional days and festivals (e.g., Chinese New Year, Mother’s Day, Hari Raya).
• To maintain high product quality through quality control, including checking products before release for sale.
• To keep track of fast / slow-moving products and plan future production accordingly.
• To manage documentation involved in the bakery for record-keeping (e.g., exact quantities produced to derive total sales and detect losses).
• To ensure documented recipes are updated and followed.
• To manage proper control of raw materials used in the department.
