Key Responsibilities
- Always carries out culinary production in the assigned station in the Main Galley or other outlets according to Company recipes and specifications, as directed by the Sous Chef or Chef de Partie.
- Adheres to the daily production schedule, under the direction of the Sous Chef or Chef de Partie, as required by the itinerary and various outlets.
- Maintains order in assigned section recipe files.
- Regularly seeks guidance from the Sous Chef or Chef de Partie in executing production according to Company recipes.
- Understands ingredient consumption for daily production and communicates fluctuations to the Sous Chef or Chef de Partie.
- Coaches subordinates in menu and recipe knowledge, production skills, culinary techniques, product holding, and presentation under the direction of the Sous Chef or Chef de Partie.
- Trains staff and ensures compliance with Company, safety, environmental, USPH and Fleet Regulations, and other regulations.
- Assists in on-the-job training for new-to-vessel Galley staff in assigned sections as directed.
- Adheres to USPH requirements and practices to reduce food waste.
- Handles materials with care to minimize waste and coaches staff to do the same.
Skills, Knowledge & Expertise
Formal qualification in culinary arts from a recognized culinary training institution.Minimum 4 years of experience in a large culinary production environment (Hotels, Resorts, or Cruise Ship) with at least 1 year as Demi Chef De Partie.Solid knowledge of Western Cuisines; basic knowledge of Public Health and Sanitation regulations and procedures.Ability to train and motivate Commis Chefs.Good English language skills, both verbal and written.Motivated to excel in all facets of job duties.Effective communicator with a warm, friendly, and professional demeanor.Commitment to courteous, professional relationships in a diverse cultural environment.Job Benefits
