Overview

Oversee production processes from mixing to finishing, ensuring adherence to schedules and quality.

Responsibilities

  • Manage ingredient sourcing, inventory control, and cost optimization.
  • Operate and maintain pastry equipment to ensure safety and efficiency.
  • Implement strict quality assurance and food safety checks.
  • Ensure hygiene, sanitation, and compliance with regulatory standards.
  • Lead, train, and supervise the entire pastry team.
  • Drive continuous improvement in processes and innovation.
  • Collaborate on production planning with planners and other stakeholders.
  • Ensure full compliance with company policies, ISO, GMP, and FSMS requirements.
  • Assist any other ad hoc assignment by the Superior or Management as and when necessary.

Qualifications

  • Culinary degree or equivalent certification in Pastry Arts or Baking.
  • Minimum 5–7 years of progressive experience in pastry and bakery production, including at least 2–3 years in a supervisory or head chef role.
  • In-depth knowledge of pastry production processes, techniques, and equipment operation.
  • Strong understanding of ingredient functionality, recipe scaling, and cost control.
  • Excellent leadership, team management, and training abilities.
  • Skilled in quality assurance, food safety, hygiene, and ISO / FSMS compliance.
  • Creativity and innovation in developing new recipes and improving processes.
  • Effective communication, planning, and problem-solving skills.
  • Ability to work independently and manage multiple priorities in a fast-paced environment.
