Job Summary :

The Chef de Partie – Pastry / Bakery is responsible for overseeing a specific section of the kitchen, specializing in pastry and bakery preparation. This role involves preparing high-quality baked goods and desserts, supervising junior kitchen staff, and ensuring consistency, taste, and presentation meet the restaurant's standards.

Objectives :

  • Ensure consistent preparation and presentation of bakery and pastry items.
  • Maintain the highest hygiene and food safety standards.
  • Contribute to menu development and innovation within the pastry section.
  • Train and mentor commis and junior chefs in pastry techniques.

Skills & Experience :

  • Proven experience in a pastry or bakery-focused kitchen environment.
  • Proficiency in preparing a wide variety of baked goods, desserts, and pastry items.
  • Strong understanding of baking techniques, pastry creams, doughs, and tempering chocolate.
  • Eye for detail, creativity, and artistic presentation.
  • Time management and multitasking abilities in a fast-paced environment.
  • Knowledge of food safety, hygiene, and kitchen sanitation procedures.
  • Minimum 3 years working in a pastry or bakery role, preferably in a café, hotel or fine-dining setting.
  • Experience with artisan breads, viennoiserie, plated desserts, and celebration cakes is an advantage.
  • Primary Responsibilities :

  • Prepare and produce bakery and pastry items according to standardized recipes.
  • Ensure quality, consistency, and portion control in all pastry outputs.
  • Monitor stock levels and assist in ordering supplies for the pastry section.
  • Maintain cleanliness and organization in the pastry kitchen area.
  • Coordinate with other kitchen sections to ensure smooth service.
  • Assist in training junior pastry staff and support their development.
  • Implement food safety and hygiene practices in compliance with regulatory standards.
  • Innovate and suggest new dessert and bakery creations aligned with seasonal trends and menu direction.
  • Requirements :

  • Diploma or Certificate in Culinary Arts, Pastry, or related field.
  • Minimum 3 years of pastry / bakery experience in a professional kitchen.
  • Flexibility to work shifts, weekends, and public holidays.
  • Ability to work well under pressure and as part of a team.
  • Strong communication and leadership skills.
  • Job Type : Full-time

    Pay : RM3, RM4,000.00 per month
