Overview Hilton is a leading global hospitality company offering a range of brands and experiences. This role is for a Chef de Partie on the Hilton Garden Inn team, working to delight guests and support kitchen operations.
What will I be doing?
- Responsible for restaurant food production, including breakfast, room orders, dinner and staff meals.
- Prepare menus as required in a timely manner and strictly in accordance with recipes, standards and plating quality.
- Maintain compliance with FSAA requirements in all aspects of hotel operations.
- Operate all equipment, appliances and machines properly.
- Assist the Chef in staff training, SOP improvement and continuous development in all areas.
- Participate in kitchen meetings to improve operations, achieve goals and maintain clear communication.
- Perform takeout work or work outside the kitchen when required.
- Ensure kitchen staff are informed about occupancy rates, forecast plans and revenue.
- Respond to guest requests to their satisfaction.
- Engage in active learning and implement appropriate changes where required.
- Accept constructive criticism with an open mind.
- Follow new menu changes requested by the Chef and use working methods for new menus, daily specials and promotions.
- Collaborate with the Chef on daily food quantities, maximize use of ingredients to reduce waste and achieve best value.
- Regularly check equipment to ensure proper operation and report problems to the Head Chef as needed.
- Ensure recipes and costs are maintained and updated.
- Monitor quality and quantity of food to optimize raw material usage.
- Attend monthly management meetings and assist in organizing departmental meetings when the Chef is absent.
- Check the quality of food prepared by staff against required standards and adjust as needed.
- Work with the Chef to determine menu selections in regular meetings to satisfy guests and segments.
- Master the use of all electrical kitchen equipment and handle them safely.
- Promote the team’s working methods to achieve department standards and objectives.
- Ensure all staff are aware of the hotel's fire and life safety / emergency procedures and policies.
- Perform any other reasonable duties as assigned.
What are we looking for?
High school or equivalent; preferably from a professional culinary school.1 to 3 years of kitchen management experience in a 4- or 5-star hotel restaurant or high-level establishment and 3 years of Kitchen Chef experience.Creative with strong research capability and development mindset; able to execute effectively.Extensive knowledge of kitchen equipment and ability to train staff.Basic knowledge of computer operation.Knowledge of food safety systems.Ability to complete tasks on time in order of priority.Work well under pressure, stay calm and solve problems.Able to work well independently and as part of a team.What will it be like to work for Hilton?
