Descrierea scopului postului

Senior Sous Chef-ul este responsabil pentru întreaga operațiune a secțiunii Hot Galley (împreună cu celălalt Senior Sous Chef), care include :

  • Pregătirea mâncărurilor pentru : restaurantul principal, bufet, room service, bufete tematice
  • Controlul costurilor în această secțiune
  • Supervizarea echipei din bucătăria caldă
  • Asigurarea menținerii echipamentelor în condiții excelente și a celor mai înalte standarde de igienă și siguranță alimentară
  • Oferirea constantă a unui serviciu de 6 stele

Relaționare ierarhică

  • Rapoarte directe către : Chef de Cuisine Main Galley
  • Colaborare directă cu : Executive Chef, Food & Beverage Manager
  • Coordonează direct :
  • 3 Sous Chefs (Saucier, Preparation, Tournant)
  • 1 Junior Sous Chef Entremetier
  • 9 Chefi de Partie
  • 9 Demi Chefs
  • 5 Commis
  • Responsabilități generale

  • Coordonarea eficientă a secțiunii Hot Galley și comunicarea continuă cu echipa
  • Supravegherea pregătirii și prezentării mâncărurilor în timpul orelor de servire
  • Asigurarea unei comunicări fluente cu staff-ul din restaurant pentru un flux optim
  • Participarea activă la prepararea mâncărurilor
  • Antrenarea, evaluarea și motivarea echipei din bucătărie
  • Stabilirea și urmărirea programului de lucru și rotației personalului
  • Asigurarea conformității cu regulamentele sanitare (USPH și alte autorități portuare)
  • Participarea la curățenia generală și gestionarea deficiențelor echipamentelor
  • Gestionarea comenzilor, inventarului și consumabilelor din bucătărie
  • Redactarea și predarea la timp a formularelor de muncă și pontajului
  • Respectarea politicilor și procedurilor companiei
  • Responsabilități financiare

  • Reducerea risipei de alimente
  • Controlul costurilor alimentare și operaționale
  • Monitorizarea utilizării materialelor de curățenie și a altor consumabile
  • Supravegherea orelor suplimentare și a folosirii echipamentelor companiei
  • Responsabilități de siguranță

  • Utilizarea corectă a echipamentului de protecție
  • Aplicarea tehnicilor corecte de ridicare și manipulare a echipamentelor
  • Instruirea personalului nou privind siguranța în bucătărie
  • Participarea la exercițiile de urgență (lifeboat drills)
  • Cerințe educaționale și de experiență

  • Diplomă de la un institut culinar sau certificare de bucătar
  • Experiență minimă :
  • 3 ani ca Sous Chef într-un hotel internațional de lux sau

  • 2 ani ca Sous Chef pe o navă de croazieră de lux
  • Cunoștințe solide în arta culinară internațională și fine dining
  • Excelentă cunoaștere a tehnicilor moderne de gătit
  • Cunoștințe avansate de MS Outlook, Word și Excel
  • Limba engleză vorbită fluent (minim 70% la testul intern)
  • Excelente abilități de comunicare, organizare și conducere
  • Atitudine pozitivă, capacitate de lucru sub presiune, spirit de echipă și aspect profesional impecabil
  • Comunicare și întâlniri de echipă

  • Întâlniri zilnice cu personalul Hot Galley
  • Ședințe regulate cu Chef de Cuisine și Executive Chef
  • Încurajarea comunicării deschise, coaching-ului și instruirii continue
  • Condiții contractuale

  • Durata contractului : aproximativ 4 – 4,5 luni la bord / 2 luni vacanță
  • Plata este efectuată doar în perioada activă la bord
  • Cabină partajată
  • Asigurare medicală inclusă
  • Cerințe obligatorii înainte de îmbarcare

  • Viză C1 / D
  • Certificare STCW 2010 & Crowd Management
  • Vaccin împotriva febrei galbene
  • Analize medicale complete
