Senior Chef de Partie - IRD, Bar & Lounge

Overview

Senior Chef de Partie - IRD, Bar & Lounge is responsible for preparing all related a-la-carte food items as per guest orders in accordance with production requirements and quality standards while maintaining a safe, sanitary work environment. This role is with Four Seasons Hotels and Resorts, Kuala Lumpur.

Responsibilities

• Prepares all food items for daily operation.
• Checks and prepares all mise en place in section.
• Maintains cleanliness, hygiene and appearance of subordinates; keeps a clean, neat and organized work area.
• Checks daily function and events; requisitions items according to activities.
• Keeps professional records and ensures standards are met.
• Evaluates performance of IRD staff.
• Participates in creative sessions.
• Minimizes wastage.
• Responsible for production, preparation and presentation of all items in his section to ensure highest quality.
• Supervises directly all subordinates in his section.
• Executes inspections of working areas in all food preparation areas in his section.
• Maintains effective employee relations within his section and with other sections; fosters interdepartmental cooperation.
• Date all food containers, rotates stock per policies, ensures perishables are kept at proper temperatures, checks pars for shift use, plans preparation, freezer pulls and line setup; notes shortages and returns unused items to designated storage; helps correct food cost problems and controls waste.
• Works harmoniously and professionally with co-workers and supervisors.
