About The Job

Based at the Mandarin Oriental, Kuala Lumpur within the Culinary Department, the Executive Chef is responsible for supervising the entire culinary operation. The Executive Chef ensures a positive working environment, fosters colleague relations, and oversees the training and professional development of all kitchen staff. The role reports to the Director of Food & Beverage / Hotel Manager.

Responsibilities

• Take full responsibility for food quality and strive to delight customers throughout the culinary operation.
• Foster positive thinking and motivation within all kitchens by providing active assistance and advice on more effective ways of running the kitchens.
• Plan kitchen activities, special events, and menu implementations in conjunction with F&B management according to the annual marketing plans.
• Ensure all action points from daily briefings or bi‑monthly operational meetings are followed by the concerned individuals.
• Guide senior chefs and stewards in decision‑making and judgement.
• Maintain grooming standards on punctuality, uniforms, and personal hygiene.
• Follow up guest comments to establish appropriate solutions and take ownership of follow‑ups.
