PASTRY CHEF (HEAD OF PRODUCTION)

Penerangan pekerjaanCulinary degree or equivalent certification in Pastry Arts or Baking. Minimum 5–7 years of progressive experience in pastry and bakery production, including at least 2–3 years in a supervisory or head chef role. In-depth knowledge of pastry production processes, techniques, and equipment operation. Strong understanding of ingredient functionality, recipe scaling, and cost control. Excellent leadership, team management, and training abilities. Skilled in quality assurance, food safety, hygiene, and ISO / FSMS compliance. Creativity and innovation in developing new recipes and improving processes. Effective communication, planning, and problem-solving skills. Ability to work independently and manage multiple priorities in a fast-paced environment.
Overview
Oversee production processes from mixing to finishing, ensuring adherence to schedules and quality.
Responsibilities
- Manage ingredient sourcing, inventory control, and cost optimization.
- Operate and maintain pastry equipment to ensure safety and efficiency.
- Implement strict quality assurance and food safety checks.
- Ensure hygiene, sanitation, and compliance with regulatory standards.
- Lead, train, and supervise the entire pastry team.
- Drive continuous improvement in processes and innovation.
- Collaborate on production planning with planners and other stakeholders.
- Ensure full compliance with company policies, ISO, GMP, and FSMS requirements.
- Assist any other ad hoc assignment by the Superior or Management as and when necessary.
