Job Summary :

We are seeking an experienced and passionate Chef de Partie (CDP) specializing in cold kitchen preparation and fresh pasta production to join our culinary team. The successful candidate will oversee the preparation and presentation of high-quality dishes in the cold section, including salads, antipasti, charcuterie, and house-made pasta, while maintaining high standards of food safety and hygiene.

Job Objectives :

  • Ensure the smooth operation of the cold kitchen and pasta production area.
  • Consistently produce dishes that meet the restaurant's quality and presentation standards.
  • Support the Sous Chef and Executive Chef in maintaining an efficient and motivated kitchen team.
  • Contribute to menu development and innovation within the cold and fresh pasta section.

Skills & Experience :

  • Minimum 3–5 years' experience in a professional kitchen, with at least 1–2 years in a Chef de Partie or senior Commis role.
  • Strong knowledge and hands-on experience in cold kitchen preparation, including salads, antipasti, dressings, charcuterie, and canapés.
  • Proven expertise in fresh pasta making—including dough preparation, rolling, shaping, and cooking techniques.
  • Proficient knife skills and excellent food preparation techniques.
  • Highly organized with excellent preparation and workstation management skills, capable of performing efficiently in high-pressure environments.
  • Familiarity with Italian or Mediterranean cuisine is highly preferred.
  • Good communication and teamwork abilities to support and train junior staff.
  • Primary Responsibilities :

  • Prepare and present cold section dishes and fresh pasta according to recipes and plating standards.
  • Manage ingredient preparation and ensure readiness before each service.
  • Oversee proper storage and labelling of ingredients.
  • Maintain cleanliness and hygiene in assigned section at all times.
  • Train and supervise junior kitchen staff in assigned section.
  • Monitor inventory and report shortages to the Sous Chef.
  • Comply with food safety and sanitation regulations.
  • Assist in daily ordering and stock rotation.
  • Collaborate with the team to improve productivity and kitchen operations.
  • Requirements :

  • Diploma or Certificate in Culinary Arts or relevant discipline.
  • Proven experience in cold kitchen and pasta-making techniques.
  • Flexibility to work shifts, weekends, and public holidays.
  • Physically fit and able to stand for long hours.
  • Passionate about food, quality, and innovation.
  • Strong work ethic and team-player attitude.
  • Job Type : Full-time

    Pay : RM3, RM3,500.00 per month
