About the Role
We are seeking an experienced Executive Sous Chef to join our culinary leadership team. This is a key role supporting the Executive Chef in driving kitchen excellence, ensuring smooth operations, and upholding high culinary and hygiene standards. The role requires strong operational, leadership, and creative skills to deliver memorable dining experiences for our guests and clients.
Key Responsibilities
Oversee the daily operations of kitchen and stewarding departments
Ensure proper manning and timely food delivery during events and functions
Plan and oversee food production, menu creation, kitchen layout, and food flows
Monitor market list purchases to ensure cost-efficiency and quality
Conduct regular staff training and development sessions
Enforce proper controls to minimize wastages, manage labour costs, and improve operational efficiency
Carry out weekly walkabouts with key team members to monitor hygiene and operational standards
Collaborate with the sales team to create tailored menus for events and clients
Ensure compliance with food safety and hygiene regulations
Implement departmental targets and SOPs to achieve operational excellence
Act as the Executive Chef’s representative in their absence
Requirements
At least 15 years of experience in first-class hotels
Minimum 5 years as Sous Chef or a senior chef position in a similar environment
Strong background in managing large-scale kitchen operations and events
Fluent in Bahasa Melayu and English
Culinary & Technical Competence : Menu Development, Culinary Skills, Quality Control
Leadership & People Management : Team Leadership, Training & Development, Conflict Resolution
Operational Efficiency : Kitchen Management, Food Safety & Hygiene Compliance, Time Management
