About The Job
Based at the Mandarin Oriental, Kuala Lumpur within the Culinary Department, the Executive Chef is responsible for supervising the entire culinary operation. The Executive Chef ensures a positive working environment, fosters colleague relations, and oversees the training and professional development of all kitchen staff. The role reports to the Director of Food & Beverage / Hotel Manager.
Responsibilities
- Take full responsibility for food quality and strive to delight customers throughout the culinary operation.
- Foster positive thinking and motivation within all kitchens by providing active assistance and advice on more effective ways of running the kitchens.
- Plan kitchen activities, special events, and menu implementations in conjunction with F&B management according to the annual marketing plans.
- Ensure all action points from daily briefings or bi‑monthly operational meetings are followed by the concerned individuals.
- Guide senior chefs and stewards in decision‑making and judgement.
- Maintain grooming standards on punctuality, uniforms, and personal hygiene.
- Follow up guest comments to establish appropriate solutions and take ownership of follow‑ups.
Qualifications
Minimum degree holder; a Graduate of a Hotel School is an added advantage.5 years of experience in a relevant position.4 years of international experience, preferably Asian and Western.Experienced in large banquet operations.Strong leadership qualities.Our Commitment to You
